These brownies are a must for any postnatal nourishment package! I have included brownies in some form for almost every delivery. There is something so comforting and loving about a postnatal bake, especially a dark gooey chocolaty one! If you want to visit a new born mother I suggest taking something delicious with you, these are so easy to make and so delicious, that dark sugar gives it something special I feel.
3 large eggs
9oz dark muscovado sugar
3oz plain flour
1tsp baking powder
11oz dark chocolate (I use 60% green and blacks)
Preheat oven to 160 or 140 for a fan assisted oven. line a 9 inch square cake tin.
melt the butter and chocolate (broken into pieces) in a bowl over a pan of boiling water
While it is melting whisk the sugar and eggs together until pale and glossy
Let the chocolate mixture cool sightly then fold in the sugar and egg mixture, sift in the flour and baking powder. Fold everything together and tip into the cake tin.
Bake for 30/35 mins until firm to the touch. I stick a wooden skewer in and look for a few crumbs stuck to it. Remove from oven and allow to cool for around an hour. It will firm up on cooling so don't put it back in the oven if it's soft in the centre, that's a good thing!
You will get around 16 squares from this bake. Dust with icing sugar before cutting.
