I feel that these energy bites are a must have for any birth room and for the new parents, they are always in my fridge at home! They are freezable, great for one handed eating and dont crumb in the birth pool! After hearing of so many mothers (myself included) living off packs of hobnobs in that intense new motherhood season I started to bring boxes of energy bites as gifts. These are my most popular.
Lime and coconut
Ingredients
3/4 cup ground almond
1/4 cup cashews
1 & 1/2 cup medjool dates or 1 cup of dates and half of apricot (apricot is very sticky so you will need more dry ingredients)
zest and juice of 1 lime
pinch sea salt
1/3 cup descicated coconut
Method – Well it couldn’t be easier, put all the ingredients into the blender and whizz until it all binds into a large ball. Take out a table spoon of mixture and roll into a ball. It should hold together well, if not add a little more coconut and almond, if it does then carry on making those little balls of energy. Put them into the fridge for an hour on a lined tray. these will be good for more than 2 weeks if they last that long! Freeze for up to 6 months.
Ultimate cacao energy
ingredients
3/4 cup medjool dates
1/4 cup goji berries
3/4 cup almonds
3/4 cup pecans or walnut
2 tbsp chia seed
1tbsp hemp protein powder
2 tbsp cacao powder
1 tbsp coconut oil
method
put the almonds, chia and pecansin the blender and blitz briefly (not to a powder). Then add everything else,blitz until it all binds into a large ball. Take a table spoon sized ball of mixture and press and roll into a ball. If it holds together then carry on with the rest, if not adjust the ingredients and blitz again.
Honey nut bites
1/4 cup peanuts and cashews
1/4 cup pistachio
1/4 cup vanilla protein powder
1/2 cup almond butter
1/4 cup honey
method
pulse all the nuts untill powdered, add everything else and bind together with the dough hook attachment or by hand. Roll into balls and store in the fridge for a week or in the freezer for up to 6 months.
